Carrot Kheer

Quench your thirst with an absolutely tasty drink, ‘Carrot Kheer’. Kheer is nothing but an Indian pudding, served for every Indian festival and special occasions. Kheer can be made using rice, wheat, fruits and vermicelli (will upload later in my posts). It’s an easy dessert recipe and healthy too. ‘Carrot Kheer’ is very special to my heart, coz it’s passed onto me by my mommy. I almost had it every day when in back home. Good old days!!!

Ingredients

1 cup of carrot chopped

1 cup of milk

¼ cup of sugar

A pinch of salt

1 cardamom pod

1 tablespoon of almond/ cashew flakes

1 teaspoon of raisins (5-7 raisins)

1 tablespoon ghee (optional)

 

Prepping,

Boil the carrots until it’s mushy. Drain the water and let the carrots cool down. Puree the carrots with a pinch of salt.

Warm the milk and dissolve the sugar in it. Now mix the milk with puree when milk is still warm.

Seasoning,

Open up the cardamom pod and crush the black seeds in it to fine powder. Add to milk and carrot mixture.

Dry roast nut flakes and raisin or roast it in ghee. Add to milk and carrot mixture.

Note: You can also add the nuts without roasting.

Serving,

Serve it hot in a tea cup or just refrigerate and serve it cold.
